烏魚每年冬至前後洄游到台灣西南沿海, 取子鹽漬、日曬,府城人叫它「烏金」。

台南宴席的體面,從一盤烏魚子開始。

Every winter, around the solstice, grey mullet migrate along Taiwan's southwest coast. Their roe, salt-cured and sun-dried, is what Tainan people call "black gold." In this city, a proper banquet begins with a plate of mullet roe.

毎年冬至の頃、ボラの群れが台湾南西の海を回遊します。その卵を塩漬けにし、天日で干したものを、台南の人々は「烏金(黒い黄金)」と呼んできました。台南の宴席の格は、一皿のカラスミから始まります。

我們用的是野生烏魚子,自己醃。

鹽,只用嘉義布袋洲南鹽場的天日鹽—— 老鹽工人工日曬的海鹽,鹹裡帶甘,醃得出海的層次。

鹽漬、翻壓、日曬,時間到了才收。

上桌前以炭火燒烤,烤到表面微微起泡,香氣才會全開。

We cure wild-caught mullet roe ourselves. The only salt we use comes from the Zhounan Salt Fields in Budai, Chiayi — sea salt sun-dried by hand by veteran salt makers, savory with a sweet finish, the kind of salt that draws out the depth of the sea. Salting, pressing, sun-drying — it is ready when it is ready. Before serving, we grill it over charcoal until the surface just begins to blister. That is when the aroma fully opens.

当店のカラスミは天然もの、しかも自家製です。塩は、嘉義・布袋の洲南塩田(Zhounan Salt Fields)の天日塩のみ。塩職人が手作業で天日にさらした海塩は、塩味の奥にほのかな甘みがあり、海の深みを引き出してくれます。塩漬け、重石、天日干し——時が満ちるまで待ちます。お出しする直前に炭火で炙り、表面がふつふつと泡立ったとき、香りが一気に開きます。

吃法 / HOW TO ENJOY / 召し上がり方

一片烏金夾一片蒜苗,先聞再吃。

配高粱或清酒,是老台南的吃法。

Take a slice of roe with a slice of young garlic. Smell first, then taste. With kaoliang liquor or sake — that is how old Tainan does it.

カラスミ一切れに、葉ニンニクを一切れ添えて。まず香りを、それから味を。高粱酒や日本酒とともに——それが昔ながらの台南流です。

上桌前才烤。炭火一起,香氣才全開。
Grilled over charcoal just before serving — that is when the aroma opens up.
お出しする直前に炭火で炙ります。香りが立つのは、この瞬間です。
