名字是棗,內裡是蝦——府城熟肉攤的老手藝。

Named after a date, filled with shrimp — an old craft of Tainan's cooked-food stalls.

名前は棗(なつめ)、中身は海老——府城の惣菜屋台に伝わる手仕事。

來歷 / THE STORY / 来歴

蝦棗是台南「香腸熟肉」文化的代表, 炸得金黃、形如棗子而得名。

早年是宴席拼盤的固定班底, 現在肯一顆一顆手工做的店,一隻手數得完。

Xia zao is a signature of Tainan's "sausage and cooked meats" street tradition — fried to a deep gold, shaped like a date, hence the name. It was once a fixture on every banquet platter. Today, the shops still willing to make them one by one, by hand, can be counted on one hand.

蝦棗(シャーザオ)は、台南の「香腸熟肉」と呼ばれる惣菜文化を代表する一品。黄金色に揚がった姿が棗の実に似ていることから、この名がつきました。かつては宴席の盛り合わせに欠かせない定番でしたが、今も一つひとつ手作りする店は、片手で数えるほどしか残っていません。

手路 / THE CRAFT / 手仕事

鮮蝦手工處理成餡,捲起定形, 下鍋炸到外皮酥、內裡彈。​

Fresh shrimp are worked into a filling by hand, rolled and shaped, then fried until the outside is crisp and the inside springs back.

​

新鮮な海老を手作業で餡に仕立て、巻いて形を整え、外はさっくり、中は弾む食感に揚げます。

吃法 / HOW TO ENJOY / 召し上がり方

趁熱,先酥後彈。

Eat them hot — crisp first, then the bounce.

熱いうちにどうぞ。まず衣のさっくり感、続いて海老の弾力を。

一條一條手工捲起,急不得。
Rolled by hand, one at a time. This step cannot be rushed.一本ずつ手で巻いていきます。急いではいけない仕事です。
