辦桌有個老規矩——冷盤之後,第二道就出羹,人稱「二路羹」。一碗熱羹把場子暖起來,也看得出這桌菜的底子。一碗好羹的道理很簡單——料是真的,湯是熬的。

​At a Tainan banquet, tradition sets the order: after the cold platter, the second course is always the thick soup — the "second-course geng." A hot geng warms up the table, and shows what the kitchen is made of. The way of a good geng is simple: real ingredients, and a broth that took its time.

​台南の宴席「辦桌」には昔からの決まりがあります——前菜の次、二品目に出るのが羹(とろみスープ)、人呼んで「二路羹」。熱い羹が席を温め、その一杯で厨房の底力が分かります。良い羹の道理はいたって簡単——具は本物、スープは時間をかけて炊いたもの。

鮮蝦手工剝殼、蟹肉, 羹芡收得滑而不糊。

​新鮮な海老は一尾ずつ手でむき、カニ肉は丁寧にほぐします。とろみは、なめらかで重くならないところで仕上げます。
